Ingredients:
  • Flour – 1 cup
  •  
  • Hot water – as needed
  •  
  • Saffron – a little bit
  •  
  • Milk – ½ cup Ghee – 2 tablespoons
  •  
  • Mint chip– 1 cup
  •  
  • Coriander leaf chip – 1 cup
  •  
  • Green chili/pepper chip – as wish
  •  
  • Onion chip – 3 big pieces
  •  
  • Cashew Nut – 8/10 pieces
  •  
  • Pistachio nut – 8.10 pieces
  •  
  • Raisin – ½ cup

 

 
Meat Ingredients:
  • Chicken – 1 kg (Sliced into medium large pieces)
  •  
  • Oil – 3 or 4 cup
  •  
  • Ginger – 1 teaspoon
  •  
  • Garlic – 1 teaspoon
  •  
  • Mix spice (Gordo mom, Cinnamon, nutmeg, mace, black pepper) or
  •  
  • Biryani spice – 4 tablespoons
  •  
  • Salt – as needed (If biryani spice is used, the balance of salt must be understood because biryani spice also contains salt)
  •  
  • Lemon juice – 2 tablespoons
  •  
  • Yoghurt – 3 cups
  •  
  • Ingredients of Biryani:
  •  
  • Basmati rice – ½ kg
  •  
  • Cinnemomum tamala/tejpata – 2 piece
  •  
  • Gordo mom – 5 piece
  •  
  • Cinnamon – 2 piece
  •  
  • Salt – 1 tablespoon

 

 
Method
 
 
 
Step 1.
 
 
First wash the meats and separate water from them. Mix all the spices of meat in a cooking pot and keep them in a slightly cold area for 2-3 hours. It would be better if these would kept for marinate for a night. Give hot water in flour and make paste of them and then make chapatti from the paste.
 
 
 
 
 
 
 
Step 2.
 
Keep the saffron in milk to be wet. Make some slightly fried onion and keep them aside. Take a medium pot and boil water in it. When water burns, give all the ingredients of rice in it except rice.
 
Step 3.
 
Give rice in it when water burns tightly. When rice is half boiled, filter them with a strainer keeping a pot under the strainer so that some boiled rice water exists. On the other side, put the meat pot on furnace with slight fire/hit. Now give slightly burned onions, mint, coriander leaf, green chili, nut, raisin on it spreading nicely.
 
 
 
 
 
 
 
 
 
 
 
 
 
Step 4.
 
 
Now spread half boiled rice on it. Put ghee, milk wet saffron, 1 cup boiled rice water on it. Aluminum foiled paper can be usable against flour paste. With this medium hit, cook for 25-30 minutes. When you get the fragrance of biryani, you must understand that the dish is cooked.
 
While putting down, put down rice & meat together from the pot and serve with salad.



Tips



You also can cook it with oven. In that case, you have to use an oven-proof pot with 110 temperature and cover the pot with aluminum foiled paper. Cook for 30 minutes or until getting the fragrance of biryani.
